My diet for the past 4 or so years:
I don’t eat breakfast
For lunch I almost always have a tuna salad (lettuce, tuna, cucumber, red bell pepper, sometimes I add soy beans), I use the tuna with no added oil and also make the dressing with no oil just water and herbs. I squeeze some lemon juice into it as well for taste and freshness. Plus salt.
For dinner I have whatever I feel like. But I don’t eat anything made from wheat. I really like rice with vegetables and sauce or baked potato with cheese or spinach and egg.
Sometimes I skip the dinner if I am not hungry or just have a snack instead.
Also I take some supplements, one of each per day:
Magnesium, Zinc, Calcium and Omega 3
It’s actually a ‘everything my body does’ journal including pain and stuff plus my mood but you can just show/ hide any info on its own. Because doctors often ask 'how often do you have ’ or ‘when was the last time’ and then I can just show them and it’s more accurate.

Diet seems alright. Your body must be running very efficiently.
