DNS is not anonymous. its basically like a phone book, you lookup the name and it gives you a number. That’s it. Your ISP may refuse to give you the number (IP) for a name (address) but thats it. PiHole just gives a local IP for ad domains and gets its requests from other dns servers and caches them locally for a time.

Otherwise an open source client such qbittorrent or transmission on an open source os such as Linux with a VPN provider whose privacy policy you are happy with. The most important thing is to bind your torrent client to the VPN interface inside the torrent client settings.

Personally I DL on a Linux machine and then upload to virus total. If they are clean, then I transfer them to an old android tablet without internet access for reading. If I was reading them on the machine I’d open them in a linux VM, either alpine or fedora silverblue with network aceess disabled.

I personally use jellyfin and it works well enough for me to watch my movies and shows. I don’t use the app but just use the browser but there are plugins for kodi and various apps too.
Ive not used Plex myself and from what I have read it does the job too. A few friends use it and are happy. I read recently they let go of 20% of their staff.
For me it comes down to it like this: do I want a company to have control over my viewing experience with closed source software or do I want a community FOSS experience under my control. That is very important to me but it depends on your own needs.

I just use FOSS. I don’t trust that proprietary garbage. I generally don’t pirate software in general. Its far too easy to trojanize it. I also buy games on steam to support linux/deck and valves investment in the ecosystem, I buy them steeply discounted though. With Roms, sales and free games I have a massive backlog so being patient pays off.
I also find that the quality of the FOSS stuff is better and way more configurable. Not hating on anyone that does pirate software or prefers proprietary stuff, to each their own
